Butternut Squash Soup

Super easy recipe that will bring a smile to your families face. Easy, quick, and healthy, this soup is great as a snack, appetizer, or meal with a side of local bread.

Ingredients

4 tbsp extra virgin olive oil

2 carrots, diced

2 celery stalk, diced

2 onion, diced

8 cups cubed butternut squash

1 tsp fresh chopped thyme

4 cups of chicken broth or water

1 tsp salt

1 tsp black pepper

2 scallions, chopped


Directions

  1. Heat oil in a large pot over medium heat. Add carrot, celery and onion. Cook until vegetables have begun to soften, about 3 to 4 minutes. 

  2. Stir in butternut squash, thyme, chicken broth, salt and pepper.

  3. Bring to a boil, reduce heat and simmer until squash is fork-tender, about 30 minutes.

  4. Let soup cool slightly and puree soup using a blender.

  5. Sprinkle scallions on top of soup and serve.
